In the mood to spice up your avocado toast game? Try my Caprese Avocado Toast! It’s totally vegan, and totally delicious. I love the combination of crusty whole wheat bread, fresh tomatoes, and sweet balsamic reduction. I will definitely be including this combo in my regular avocado toast rotation!

Vegan Caprese Avocado Toast

I hope you enjoy this fun twist on a caprese salad as much as I do!

Ingredients

  • 2 pieces of bread
  • 1 large or 2 medium heirloom tomatoes sliced
  • 1 avocado
  • 3-4 basil leaves
  • 1 cup balsamic vinegar
  • Fresh herbs to garnish I used parsley & pea shoots
  • Salt & pepper
  • Garlic powder
  • Chili flakes

Instructions

  1. To make your balsamic vinegar reduction, bring the vinegar to a boil in a small sauce pan, then reduce your heat and let it simmer for about 10 minutes, stirring occasionally. Remove from heat and allow your reduction to cool.
  2. Now for the toast! While your bread is toasting, season your avocado to taste (I like salt, pepper, garlic powder, and a little red pepper) and mash it in a small bowl. Spread that on your toast, then top with tomatoes, herbs, and your balsamic reduction. That’s it! Enjoy!
  3. You can store your leftover balsamic reduction in an air-tight container. Keep it in the fridge if you won’t be using it soon, and warm it up slighly by placing your container in a bowl of warm water before you use it next.

Modifications

Craving cheese? Throw some burrata on there!
Don’t have time to make the reduction? You can buy pre-made balsamic vinegar reduction. You can also make a large batch of this reduction and save it so you only have to make it once in a while!
