Ad Ode to Avocado Toast

If you’re anything like me, you already know how great avocado toast is, and you make it as many times as you can during the week. If you’re not like me, I highly suggest that you get on board with avocado toast. Not to be too bossy…but it’s basically the best meal ever. You get your healthy fats from the avocado, protein from any seeds and nuts you top it with, and toast is well, toast. It just makes you happy. You can use whole grain or gluten free toast if you’re trying to pack in more protein and nutrients, or you can use honey wheat or sourdough or whatever your most favorite bread in the world is.

You may already be familiar with the health benefits of avocado, but here are just a few of the delightful things contained in these super fruits: potassium, folate, vitamin C, vitamin K, vitamin E, and vitamins B5 & B6. The “”healthy fats”” that avocados are famous for are only part of the story. They are also full of a monounsaturated fatty acid called oleic acid, which is associated with reduced inflammation and shown to have beneficial effects on genes linked to cancer.

A Simple and Healthy Work Lunch Idea

I also highly recommend avo toast as an easy-to-pack work lunch. If your office doesn’t have a toaster, proudly be the person who brings one in! Your office probably has a budget for one, and if not, they’re only about $10-15 at most stores. Meal prep consists of bringing bread, an avocado, and your favorite spices. Keep it simple and use a spice blend, and even consider keeping those spices in your desk drawer. I have the most productive afternoons when my lunch consists of avocado toast and a piece of fruit.
