Chocolate Chip Cashew Cookies

These might be my favorite cookies of all time. The dough is light and delicious, and not too sweet. The texture turns out perfectly without chilling the dough first, which is a huge time saver. The combination of rich dark chocolate, sweet white chocolate, and lightly salted cashews is absolutely perfect. You can also experiment with other ingredients, like oats or cranberries, if you want to add more depth. You have to give these a try!!

Ingredients

  • 1 3/4 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 sticks unsalted butter softened
  • 1 1/4 cups firmly packed brown sugar light or dark will work!
  • 2 large eggs
  • 1/4 tsp fresh ground nutmeg
  • 2 tsp whole milk
  • 3 tsp vanilla extract
  • 1 1/2 cups semisweet chocolate chips or chunks
  • 1 cup white chocolate chips
  • 1 cup cashews broken into small pieces

Instructions

  1. Preheat oven to 375 degrees Fahrenheit
  2. 2 Cream the butter and sugar using a hand mixer or stand mixer for about 3 minutes
  3. Add wet ingredients and combine
  4. Add dry ingredients and mix until just combined
  5. Add in your chocolate and nuts and mix with a spoon
  6. Drop large tablespoons of dough onto a cookie sheet covered with parchment paper. I do 6 cookies per baking sheet
