These energy bites are the perfect midday pick-me-up, or grab-and-go breakfast. They are healthy, vegan, and very customizable. I hope that you enjoy them as much as I do!
Recipe for Vegan Energy Bites
Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
Servings 20 bites
Ingredients
- 8-9 Medjool dates
- 1 cup uncooked rolled oats
- ¼ cup unsweetened coconut flakes
- ½ cup ground flax seeds
- 1 tbs chia seeds
- 1 tsp vanilla extract
- ½ cup peanut butter
- ½ tsp cinnamon
- Dash of nutmeg
Instructions

Pit your dates if they didn’t come pitted, and roughly chop them.

Add dates and dry ingredients to food processor, and chop until smooth.

Add wet ingredients, and combine until uniform.

Refrigerate mix for 15 minutes (this is your “cook time”)

Roll mixture into tablespoon sized balls, and refrigerate in an airtight container until you’re ready to enjoy them. They keep refrigerated for up to two weeks.
Modifications
- Allergic to peanuts? Substitute almond butter for the peanut butter.
- Not a fan of coconut? If you are allergic to coconut, you can use crushed almonds or another type of nut instead. If you just don’t like coconut, give the recipe a try anyway. I don’t usually like coconut, but I love these energy bites!
- Huge chocolat fan? Add ½ cup chocolate chips to the mix!
